Elizabeth “Beth” Larsen passed away peacefully at her home outside of Scio, Oregon. Beth was born in Minot, North Dakota and was then adopted at birth. She lived in Minot until the age of fourteen when she moved to Oregon to live with her aunts and uncles in Lyons, and then in Stayton. Beth attended Stayton High school and graduated in 1968. Upon graduation she moved to Sioux City, Iowa to live with her adopted mother and three other children. She worked in the food and beverage industry. Beth traveled to work in England for a year and a half, and then returned to Sioux City, where she met and married her husband Kent. The couple married in 1980, and two years later (in 1982) they had a son, Matthew. Due to health problems, the family moved back to Stayton in 1985. Beth and Kent were married for 40 years. She was 71 years old. She attended Chemeketa Community College and graduated in 2 years in the field of Medical Assisting. Shortly after graduation, she went to work for Kaiser Permanente in the OBGYN department. She retired in 2009 with 20 years of service. Beth enjoyed RV camping, gardening, reading, bowling and spending time with family and friends. She was a member of the Women of the Moose, Stayton Chapter. She was truly a loving, compassionate person who never judged anyone. Elizabeth is survived by her husband; her son Matthew and his wife Tammy; her granddaughter Audrey Elizabeth and her grandson Joseph Elkins of Yorktown, Virginia; her brother Nathan Crawford of Lyons and her sister Nikki Cox of Beaverton; and many cousins, nieces and nephews. She was preceded in death by her sister Jeneane Hansen of Tigard, Oregon. Arrangements by Weddle Funeral Service in Stayton. At this time due to the pandemic, no services are planned. Services for Beth will be announced in the future when it is safe for all to attend. Donations in her name can be given to Willamette Valley Hospice.
